Orange-Cinnamon Coffee Cake

Sometimes the average bowl of cereal with milk in the morning gets old. A little variety is nice, right? Maybe throw in a pancake, waffle, or slice of french toast every so often. Maybe even a bagel? They say that breakfast is the most important meal of the day, which, if you're anything like me, is true! This orange-cinnamon coffee cake recipe is the perfect way to start your morning off! it is fluffy, flavorful, sweet, tangy, and oh-so-delicious! Let's get baking!

Ingredients:

For the streusel crumb topping:

- 1 1/4 cup all purpose flour

- 1 1/2 teaspoon cinnamon

- 1/2 cup light brown sugar

-1/2 cup (1 stick) salted butter


For the Cake:

- 1/2 cup (1 stick) salted butter, softened

- 2 cups all purpose flour

- 3/4 cup plus 2 tbsp white sugar

- 2 1/4 tsp baking powder

-3 eggs

- 1/4 cup greek yogurt (sour cream or cream cheese works too)

-zest from one orange

- 1 cup pulp-free orange juice


Directions:

  1. Preheat oven to 350 degrees Fahrenheit

  2. Make the topping: In a medium bowl, stir together flour, brown sugar, and cinnamon. Using a pastry cutter ( or cut the butter into very small cubes), cut in the butter. Use your hands to coat butter in flour mixture, until the mixture resembles wet sand and sticks together when pressed. Set aside.

  3. Make the cake: Cream together butter and sugar until light and fluffy (2 minutes). Add eggs, greek yogurt, and orange juice, mixing until well-combined (2-3 minutes). Fold in flour, baking powder, and orange zest. Be careful to not over-mix!

  4. Grease an 8x8 inch pan thoroughly. Pour in cake batter. Evenly spread crumb topping evenly over the top of the batter. Put in the oven and bake for 45 minutes to one hour, or until a toothpick comes out clean when inserted. Take out, allow to cool for 10 minutes, and serve! Hope you all enjoy!!!

Recipe Tips + Tricks:

  • Make sure your wet ingredients are well-combined and emulsified before you fold in the dry ingredients to avoid a rubbery texture!

  • Be careful to not over- mix in order to ensure a fluffy cake!

  • Storage: Freeze for up to 6 months or store in an airtight container at room temperature for up to 8 days!

  • Make sure the streusel topping is evenly spread before you bake, because we all know the streusel is everyone's favorite part!

  • If you don't have orange juice, some alternatives could be strawberry, blackberry, or raspberry puree. You could also do lemon juice or grapefruit juice instead!
