Circus Animal Cookie ICE CREAM

Is this a spontaneous, ridiculously-delicious, chaotic, and Crumbl Cookie inspired ice cream recipe? Yes!! Does it taste like heaven? Absolutely. Is it hard to make? Not at all!! This recipe came to be after I was scrolling through TikTok one day, and came across the Crumbl cookie add for the weekly lineup, and saw that Mother's Circus Animal Cookie was one of the flavors!! I figured if you can make a cookie out of everyone's favorite childhood snack, why couldn't you make an ice cream flavor? The final product of this super easy recipe is just as beautiful as it is delicious!! Hope you all enjoy! Let's get making!!

Note: This recipe works great in an ice cream maker, but if you do not have one, no worries! Just fill a Ziploc bag with 3 cups of ice, and 1/2 cup of salt. (Rock salt works best). Then, pour the ice cream mixture in a separate bag, seal it, and place the ice cream bag in the ice bag. Then shake the Ice bag for 20 minutes (or until proper ice cream consistency) to churn.


Ingredients:

- 2 cups heavy whipping cream (for lower fat version, do 1 cup cream, 2 cups milk instead)

-1 cup milk.

-1 teaspoon vanilla

-1/2 tsp salt

-1/2 cup sugar

- 1 package Mother's Circus Animal Cookies (but a knockoff brand works fine too!)

- 1 tbsp rainbow sprinkles (optional)


Directions:

  1. In a medium-sized bowl, mix together the milk, cream, vanilla, salt and sugar. Pour 3/4 of the mixture into your ice cream maker and begin churning.

  2. In another medium bowl, pour in 3/4 of the bag of Circus Animal Cookies, saving the rest for topping. Crush the cookies into 1/4- 1/2 inch pieces. Pour the remaining ice cream mixture over the crushed cookies. Let sit for 10 minutes. Pour mixture into the ice cream maker.

  3. Churn mixture for 20-45 minutes, or until desired consistency. Freeze for 2 hours in freezer. Top with remaining cookies and sprinkles. Serve and enjoy!!

A Few Recipe Notes:

  • You can keep the ice cream in an container in the freezer for up to 6 months!

  • Use the Ziploc bag method if you don't have an ice cream maker!

  • Feel free to try this recipe with regular animal crackers too, just add white chocolate, some pink food coloring and sprinkles!

  • If you are out of either milk or cream (or both), use half and half as a replacement!

  • If using almond, oat, soy, or cashew milk as a replacement, just note that it will not turn out as thick and creamy as regular ice cream.
